After revealing the recipe for his son’s favorite pie, his almond fondant or his chocolate flan, the former pastry chef of Plaza Athénée shares this time a creation he discovered in 1999 while working for a famous Manhattan restaurant. This recipe is none other than a great classic of American desserts: ice cream with caramelized maple syrup. ” At first, I couldn’t control myself, I used this new kind of drug non-stop, I was completely crazy about it », Says Christophe Michalak on Instagram. Delicious with a chocolate cake or an apple pie, it is also very easy to make. The only constraint? You need an ice cream maker or ice cream maker.

Here is the recipe for caramelized maple syrup ice cream by Christophe Michalak:

  • 400 g of maple syrup + a little syrup on the side
  • 400 g whipping cream
  • 150 g whole milk
  • 5 egg yolks Pecan nuts
  • Sesame seeds

In a saucepan over medium heat, reduce 400 g of maple syrup to 200 g.
Add 400 g of whipping cream and 150 g of whole milk. Boil it all. Turn off the heat and add 5 egg yolks, stir well with a whisk, then transfer to another very cool container (to cut the cooking).
Keep everything in the fridge for at least 4 hours, then pour into an ice cream maker.
In the meantime, mix pecans and sesame seeds with a little maple syrup, then roast everything in the oven for 10 minutes at 150 ° C.
Also reduce maple syrup and let cool.
Place the ice cream in a tray previously stored in the freezer, add the reduced maple syrup, the pecans and the roasted sesame seeds.
Taste immediately, paradise exists.
