Brew our Christmas beer recipe step by step:
Stages 1
In your brewing tank, heat 16 liters of water to 72°C and pour in the crushed grains.
Stir well to soak in all the malt and do not hesitate to crush the lumps against the walls of the vat.
Mix until the temperature drops to 65°C and keep it there for 1 hour.
At the same time, heat 16 liters of water to 75°C.
Stages 2 (optional)
If you have the possibility, do a 10 minute mash out at 75°C.
Stages 3
Then move on to filtration and rinsing.
Stages 4
Heat your must to boil for 60 minutes.
Integrate your first 20 grams of hops from the start of the timer.
15 minutes from the end, add the candy sugar and the last 30 grams of hops.
Finally, infuse all your spices during the last 5 minutes of boiling.
Stages 5
Then cool the must to 21°C and transfer to the fermenter without forgetting the yeast.
Your initial density should be around 1.064.
Ferment at 21°C for 4 weeks. Then raise the temperature to 24°C for a final week.
The final density should be around 1.014.
Stages 6
Sterilize (in a little water) 7g/l of sugar for bottling.
