Restaurant chain Chipotle has teamed up with robotics company Vebu to test the Autocado robot, which cuts, cores and peels avocados for use in guacamole.
What is known
It is enough for kitchen workers to fill the robot with ripe avocados weighing up to 11 kg and choose the size. At the end of processing, they collect the fruits in a bowl, add the rest of the ingredients and proceed to mash.
As Autocado improves, Chipotle expects to cut guacamole cooking time in half. This will ensure uninterrupted supply of food and save employees from some of the laborious work.
The restaurant also believes the robot can reduce food waste through more efficient processing.
Autocado currently only operates at its test facility in Irvine, California. According to Chipotle, this is the beginning of a “long-term partnership” with Vebu.
