Already this week, the most sincere and miraculous holiday of the year will be celebrated – Christmas, which is filled with moments of togetherness in the family circle and a delicious meal. Chef Raimonds Sommers shares a special idea of a three-course meal to enjoy traditional and typical Latvian flavors, as well as to find fascination in new flavor combinations.
“Latvian beliefs say that nine dishes must be put on the table at Christmas so that the next year will be full and rich. In order to make it easier for residents to think about how to pamper themselves and their families during the holidays, I invite you to prepare a three-course meal for Christmas, which will include such popular products as pumpkin, roast and cauliflower, supplementing the meal with today’s current flavors – quinoa, feta cheese, marshmallows. These will not only be easy and quick-to-prepare recipes that will be enjoyed by both children and adults, but they are also particularly beneficial,” says chef Raimonds Sommers.
Raymond Sommer’s three-course Christmas meal recipes for four people:
Appetizer: Butternut squash with quinoa and feta cheese salad
Ingredients for 4 servings:
1 butternut squash (Butternut squash kg, 1.17 EUR)
30 g onion (Onions 45+ kg, 0.79 EUR/kg. One onion approx. 0.15 EUR)
5 g garlic (Garlic LATVIA kg, 4.99 EUR. One garlic approx. 0.30 EUR)
150 g of quinoa (Quinoa VALDO white 250 g, 2.34 EUR)
100 g feta cheese (Cheese FAVITA 45% 270 g, 1.29 EUR)
100 g of cranberries (Large cranberries 200 g, 2.49 EUR)
10 g fresh basil (Basil WELL DONE 20 g, 0.99 EUR)
20 ml of olive oil
2 g of cinnamon
salt, pepper to taste
Total: 8.73 EUR
Preparation process:
Wash the pumpkin, cut it into approximately 1 cm wide slices and place it on a baking tray.
The pumpkin slices are smeared with olive oil, sprinkled with salt and pepper and baked in the oven at 200 degrees for 10-15 minutes.
Cook the quinoa according to package directions.
Heat oil in a pan, add finely diced onion and fry on the pan, then add grated garlic.
Stir fried onions and garlic into the cooked quinoa, add cranberries and cinnamon.
Arrange the prepared quinoa salad on the oven-baked pumpkin slices and put sliced feta cheese on top.
Bake in the oven at 200 degrees for another 5 minutes.
Sprinkle with freshly chopped basil before serving.
Main course: Roast pork in mustard-honey glaze with fried cauliflower
Ingredients for 4 servings:
1 kg roast pork in mustard-honey glaze (RGK package, 5.99 EUR)
1 piece of cauliflower – preferably large size (2.99 EUR/piece)
20 g lemon juice (2.29 EUR/kg. One lemon approx. 0.50 EUR)
100 g grated hard cheese (WELL DONE 37% 12 months 80 g, 1.35 EUR)
paprika powder (ground paprika SANTA MARIA 22 g, 0.75 EUR with “Thank you” card)
100 ml rapeseed oil
salt
Total: 11.58 EUR
Preparation process:
Place the roast with the entire baking bag in a preheated oven at 185 degrees for 1.5 hours. Follow the preparation instructions on the product packaging.
After 1.5 hours, return the open baking bag to the top and bake again to form a crispy crust.
At the same time, wash the cauliflower and cut it into steaks (about 1.5-2 cm wide slices).
Arrange the cauliflower slices on baking paper and spread with a mixture of lemon and oil, cover with spices and bake for 15 minutes.
Remove the cauliflower slices from the oven, brush with oil again and continue baking for another 15-20 minutes, until the cauliflower has acquired a beautiful, golden color and is soft.
When the cauliflower is ready, pour on the hard cheese and put a juicy slice of roast on top.
Dessert: Marshmallow fudge
Ingredients for 4 servings:
250 g sugar (DIAMANT sugar 1 kg, 0.95 EUR)
170 g of condensed milk (Condensed milk with sugar 397 g, 2.69 EUR)
40 g of butter (Butter FARM MILK 82% 180 g, 1.29 EUR)
240 g of milk chocolate (Milk chocolate MIO DELIZZI 100 g, 0.48 EUR)
120 g walnuts (shelled walnuts EXTRA LINE 150 g, 2.79 EUR)
100 g of mini marshmallows (assorted marshmallows FINI Marshmallow Mix 90 g, 1.45 EUR)
6 g of salt
Total: 9.65 EUR
Preparation process:
Place baking paper in an approximately 8×8 cm container.
Put sugar, condensed milk, butter, salt and milk chocolate in a saucepan, bring to a boil over medium heat. Cook for about 5 minutes, stirring constantly. After that, do not heat the pot anymore – add the walnuts and quickly stir in the marshmallows.
Pour the finished dessert mass into the previously prepared container and level it evenly.
Place the dish in the refrigerator for at least 2 hours.
Before serving, the dessert is cut into the desired shape. To create a Christmas mood, you can use gingerbread molds and press out the desired Christmas shape.
