However, as hard and tough as that fame is, it can be lost just as easily, says Spaniard Victor Martin, whose family restaurant “Trigo” in Valladolid, which he runs, has been on the “Michelin” list since 2017.
The chef does not deny that the Michelin star is a help and a burden for the restaurant. “It’s both good and bad. The good thing is that there is a lot of interest in the restaurant, it’s always busy, lots of visitors. The bad thing is that you have to work a lot,” he laughs. “There are other Michelin restaurants in the province of Castile and León, but in Valladolid we are the only ones.
