“I am Julián Medina, the Chef and owner of Soledad and my favorite dish is duck with mole, with rice, plantains and a fried duck egg.”
“Here we have the duck, which is a… basically carnitas, it is cooked in its own fat. We have here some ripe bananas, duck egg, red rice, here there is duck fat, with which I cook the duck, which is what we are going to cook all this with, the mole, which is very traditional, and some flowers to decorate the dish,” Medina added.
This is one of about 20 dishes served at the Soledad restaurant located on the Upper East Side.
“This dish is totally inspired by one of my grandmother’s recipes and I grew up with this dish for breakfast, lunch (and) dinner,” Medina said.
And it is precisely that inspiration that chef Julián Medina found in the recipes of his mother and grandmother to open his twelfth restaurant.
“Soledad’s idea is basically to bring my family’s recipes to New York, to have a little of my mother’s and my grandmother’s recipe books. They gave it to me and I am making recipes from them to honor all that is good.” what they did in their life was to put up with the whole family.
What Medina wants to share with the people of New York, not only give them a little piece of Mexico with his food, but also a little bit of its history.
“The message I would like to translate is… the flavors I grew up with, I think that’s the most important thing, right?”
“I believe that as a chef you want to cook for people, not for myself, but in this case, I like to transmit my roots, my cultures, and in food I believe that that is essential,” Medina said.
Apart from the fact that with this recipe he shares something that, according to the chef, anyone can make.
“We can use this dish, or you can make it at home, it is very easy to make. It is not necessarily using the duck, you can (put) chicken or nothing, just the rice with the bananas and “The mole is delicious.”
