A cheese that looks like yogurt but is not, which can be eaten for breakfast or as a snack, and which is high in protein and hardly any fat: it is skyr. “Skyr is an ancient product that has been consumed in Iceland for centuries. It is known as a yogurt, but it is actually cheese ”, Dr. Emanuela Russo, INCO dietician (National Institute for the Treatment of Obesity) at the IRCCS Policlinico San Donato in Milan, explains to Gazzetta Active.

How is skyr made?
“It is obtained from low-fat milk, which is heated to very high temperatures so that all the fats come to the surface to be removed. At this point the milk is left to cool and the calf rennet and a small amount of previous skyr are added, in order to guarantee the presence of the bacteria responsible for fermentation. Like all fermented products it is rich in probiotics, but it is highly digestible because it has a lower casein concentration than a normal cheese and it is lighter, because all the fat is removed ”.

What nutritional properties does it have?
“It has a very high protein content: a 150-gram serving has about 100 calories, a content similar to that of low-fat Greek yogurt, but a whopping 17 grams of protein, only 7 grams of carbohydrates and very little fat. In fact, it’s like a low-fat Greek yogurt with added protein. Even compared to regular yogurt it has a lot more protein. And it has a much lower fat content, because it is made from skim milk. A regular yogurt usually has 4 grams of protein per 100 grams – you can understand that skyr has a lot more. It also contains mineral water, in particular football (15% of the recommended daily allowance in 150 grams of skyr), phosphorus, vitamins B12 and D “.

Is it recommended for sportsmen?
“For athletes, it can be good for after training, thanks to its protein intake. It also has a low fat content. And after the sporting performance you need to refresh yourself but you are in a moment of recovery, so it would be better not to let the body manage the digestion of fats “.

Can it be okay as part of a weight loss diet?
“Absolutely yes, also because thanks to the high protein content it promotes the sense of satiety. It can also be used to prepare desserts, such as cheesecake, or savory creams such as tzatziki, because the white one has a slightly acidic taste, which goes well with salty flavors, even to accompany fish dishes “.

Are there any situations in which it is not recommended?
“Be careful if you are lactose intolerant or have intestinal problems with dairy products, because skyr contains lactose”.
