Christian and Inge Fessinger pressed oil from walnuts and grape seeds in Achkarren for the first time 15 years ago. What began as a hobby has now grown into the small family business “lmhle Fessinger” with a sales room in Breisach-Hochstetten and a web shop. The heart of the company, the self-developed press, is also located in Hochstetten.

The highly aromatic grape seed to refine salads is still on offer, but our choice falls on “Black Nuts”. These are green-harvested walnuts with their peel that have been preserved in a spiced syrup and go well with goat’s cheese, roast venison or raclette and fondue, explains the host, best cut into very thin slices. In fact, the combination of the lightly sweet nut slices with strong cheese opens up new taste experiences.

The Fessingers are also proud of other creations such as “tipsy walnuts” (marinated in rum) and walnut pesto. The ingredients come from the Kaiserstuhl and Markgrflerland. Walnuts are a scarce commodity in South Baden, explains Christian Fessinger. On the one hand, this is due to the immigrated walnut fruit flies, which cause damage in the Upper Rhine. In addition, there is a lack of producers who tend trees on a large scale. “In bad years the harvest can sometimes fail”, says Fessinger. Harvesting and cracking is basically done by hand.
