It has only been open for a few months and yet has all the recognition of professionals in the trade. The Bistrot Racines, installed near the Notre-Dame de Chartres cathedral has entered the Gault & Millau 2022.
The new establishment of Chartres (Eure-et-Loir), founded by Nathalie and Bertrand Jallerat is offering a chef’s hat in the famous gastronomic guide, the paper edition of which is due out in a few weeks.
At Bistrot Racines, “a chic and warm decor”
the Gault & Millau flirt with this “place of life and sharing which vibrates throughout the day to the sound of the shaker”, commenting on “the chic and warm decor” or the cuisine of chef Benoît Cellot or the selection of wines from sommelier Thibault Hurel.
the Racines Bistro opened its doors to summer 2021. By combining a wine bar and bistronomic cuisine, the establishment has found a loyal clientele in just a few weeks.
Three hats for Le Georges
The Jallerat gourmet restaurant, Le Georges, located in Le Grand Monarque, unsurprisingly retains its place in Gault & Millau, with three toques. A “royal table”, according to French cooking professionals, with chef Thomas Parnaud as “ideal maitre-queux”.
