Foods high in saturated fat can cause high cholesterol because they interfere with the receptors on liver cells. Liver cells have low density lipoprotein receptors (LDL) which pick up excess cholesterol when it floats in the bloodstream.

The receptors remove cholesterol from the bloodstream and transfer it to the liver, where it is broken down and then excreted from the body. If there is too much saturated fat circulating, the LDL receptors will stop working properly.

Damaged LDL receptors are unable to capture cholesterol anymore, which is why cholesterol levels rise. This condition is dangerous, because cholesterol sticks to the walls of the arteries and over time more deposits clog the arteries.

In conclusion, people with high cholesterol can still eat cheese. Provided, they choose cheese that is low in saturated fat.
