In case you want to activate this function permanently on your iPhone, you must go to “Settings”. Once inside you will have to go to the “Telephone” section, where you will find the “Show caller ID” option. For all the calls you make to be hidden, you just have to slide your finger on the screen and deactivate it. Note that this change is reversible, so if you ever want to stop appearing as “Unknown”, you just have to go through this route again and activate the Caller ID.
