On days off, deciding what to make and what to eat for lunch is quite an important issue.
In order to solve my big problem, today I enjoyed a British cafe-style lunch.

I’ve been secretly thinking about making and eating avocado and bacon for a few days now. This is one of the most British menu items.
Since it’s an open-faced sandwich, bread is required.
I was a little confused about whether I should toast the bread I had at home to a crisp, or bake soda bread, which is a typical easy bread.
After thinking about it, I started craving crumpets, so I decided to make them in a hurry.
Since crumpets need to be fermented, some people find them difficult to make, but once you get used to making them, it’s really easy.
After all, all you have to do is mix it up and fry it in a frying pan. The taste is simple, so you will never get tired of it. It can be a light snack or an accompaniment to tea time.
Well, I’ve tried making crumpets several times, but I’ve settled on the formula.

How to make avocado and bacon
And then there’s the avocado and bacon that I’ve been wanting to eat for a few days now.
Avocado & bacon ingredients (for 2 people)
- 1 avocado
- 1/2 lemon (I like more, but 1/4 lemon is also enough)
- A good drizzle of olive oil
- a little salt
- a little pepper
- 4 pieces of bacon (any amount you like) *Diced bacon is also recommended as it is more filling.
- Broccoli sprouts (you can use your favorite sprouts with or without them)
How to make mashed avocado and bacon
①Peel the avocado and remove the seeds, then mash it with a fork to make a mash.
➁ Squeeze the lemon. It fixes the color and tightens the flavor at the same time.
③Mix a little olive oil, salt and pepper, and the mashed avocado is ready.
④ Fry the bacon until crispy and add it to the mashed avocado.
Avocado doesn’t have that much flavor, so the saltiness of the bacon will be the main flavor.
You might be tempted to add things like garlic to the avocado mash, but I’d like to keep it simple with just salt and pepper for seasoning. (It’s a matter of preference)
⑤ Top the crumpets with mashed avocado and bacon as you like and enjoy as an open sandwich.
The gooey texture of the avocado and the crispy texture of the bacon are quite good. If you use crunchy bread, you can enjoy a different texture. Let’s go with what we have at home.
Soda bread would also go well.
It might not be enough for a family with a lot of people, but for me, it’s quite enough for a holiday lunch.
Although the picture shows two crumpets, I actually ate three.
