The handmade beers from the Hirtler brewery in Neuershausen are something special. The Hirtler brewery, which burned down in 1914, was brought back to life a hundred years later as a microbrewery by a four-person brewery collective in the courtyard of the former Gasthaus Sonne. Well more than 100 beer recipes have been tried out since then, says Bohumil Podestat, the senior in the team at 74. The beer is always available on Thursday evenings in uneven calendar weeks in the Lädele, meanwhile also on Fridays from 3 p.m. at the Marcher weekly market. Lager bright, its dark pedant, Märzen, and the bitter Pilsner creations are particularly popular. Mostly twice a week brewing takes place in the 250 liter kettle. There are also special beers to match the season, such as an unfiltered Doppel-Bock and a spicy Christmas drink for Christmas. Because the buck has to mature for at least two months, it was brewed at the end of September, says Podestat. The bottom-fermented beer has an original wort of 21.2 degrees, 8.2 percent alcohol and a sweet and tart character. The Christmas drink is therefore elegant, with 5.4 percent alcohol and 14.1 degrees of original wort, after six weeks of ripening. Spices such as cinnamon, cloves and orange peel can be tasted – additions that prevent the drink from being called beer. If the Christmas production is sold out, vouchers for fresh beer in the New Year are also offered.
