Since Friday, the day of the death of his father, Jean-Yves Glauser, the legendary boss of this establishment in the Old Town, he has received nearly 300 phone calls and fifty messages. “How touching. Following the death of the boss, he is the one who takes over from the establishment. Vincent Glauser, 28, knows the restaurant inside out. “I was almost born here,” he quips. This Sunday, he wears a brooch on his costume on which it is written: “The son of Glôzu”. “When I was a kid, all the servers had a name badge. My father then offered me this one. It’s a memory.”

During his father’s illness, Vincent Glauser expressed his interest in the City to take over the restaurant, today on behalf of his parents. If he gets management, he wants to keep the spirit of the bistro. “My father was a figure of the Old City, it will not be easy to pass after him,” he notes however.
