Bistrot Racines officially inaugurated in Chartres

The Bistrot Racines, a new establishment located at the foot of Chartres Cathedral, was officially inaugurated on Tuesday, September 14, 2021. A project led by Nathalie and Bertrand Jallerat, patrons of the Grand Monarque:

“This new place is dedicated to bistronomy, eco-responsible cuisine with local products, and organic wines in particular. We also offer specific cocktails.”

The establishment is managed by chef Benoît Cellot and Thibault Hurel, room manager and sommelier. This inauguration took place in the presence of many guests, including the famous sports journalist Nelson Monfort.

Yves Camdeborde, chef at the head of several restaurants in Paris, often presented as the leader of the concept of “bistronomie”, is the sponsor of this project.

“Yves was not able to be with us for this inauguration in the end, but he is still sponsoring our establishment and should come and visit us soon,” says Bertrand Jallerat.

Yves Camdeborde, also known for his participation in the Masterchef program of TF1 in the 2010s, nevertheless wrote a word in support of this project. A letter read by Sébastien Lapaque, novelist and essayist close to the chef.
