Preparation :
How to make this stewed beef cheek with button mushrooms?
Start by heating the oil over medium heat in a cast iron skillet.
When hot, sauté the pieces of meat.
Brown them lightly on all sides.
While the meat is cooking, peel the onion and cut it into small dice.
Using kitchen scissors, remove the rind from the smoked breast then cut it into small pieces of bacon.
Remove the meat and set it aside in a covered container.
Fry the onion and the bacon until the onion is transparent.
Sprinkle the flour and mix.
Add the wine, mix.
Add the bay leaf, thyme, honey, salt and pepper and the meat left to stand.
Mix.
Cover and cook over low heat for 2 hours.
Before the end of the 2 hours of cooking, cut the mushrooms into 2 or 4 if you don’t have any miniature ones.
Then add them to the pan and mix.
Cover again and continue cooking for 30 minutes or more.
Check doneness and seasoning.
