The aperitif is not always the most obvious. We want to keep it simple, but at the same time sophisticated and refined. Especially since you have to know how to stay light before a rather generous meal … In short, a real headache.
Whether you are two, three, 10 or 30 around the table for New Years Eve, it is important to take good care of this meal. But that doesn’t mean spending hours in the kitchen (you also have to dress up and look good). And no question of going broke either. For that, here are our quick and easy little party aperitif toasts, chic but without fuss and which will please everyone… except those who don’t like Christmas. Sorry, who?
Sea toast
Fish and shellfish are the stars of the end-of-year celebrations. Salmon, shrimp, scallops, lobster… There is something for everyone. So, whether or not you have prepared some for the rest of the meal, you can make your guests and your family salivate as an aperitif.
Spread your little toasts with seafood rillettes made with crab, salmon, shrimp or another that you particularly appreciate. Then decorate with mini shrimps or fish eggs for example.
Holiday toasts with fresh cheese 0%
The more of you there are, the more insightful you have to be. To do this, opt for mini toasts of wholemeal or cereal bread, to spread with 0% cream cheese (plain, with fig or even with nuts). Then you have to add a little Christmas touch on top with small slices of smoked salmon, a teaspoon of fish eggs, or even a small piece of foie gras with berries… The choice is wide enough, this is the advantage of fresh cheese.
Sweet and savory toasts
Some are real fans of sweet and sour, while others really can’t stand it. It’s up to you to know the people at your table but one thing is for sure, these mixes are really tasty.
Opt for the hummus toast decorated with diced apple and honey. Or the one made with homemade cheese sauces: mascarpone + Roquefort embellished with nuts and berries to make it more festive. But also a creamy toast made with Fourme d’Ambert and pear chutney. Or the goat cheese staple with a pretty fig half-cut on top.
Holiday toasts in recuperative mode
For Christmas Day, or New Year’s Eve on December 31, it is quite possible to collect the leftovers from the day before for an aperitif. After a hearty December 24, you still have a little smoked salmon here, a little foie gras there, a few scallops or even fish eggs… it doesn’t matter. The advantage of sandwiches is that they can be made with whatever you like. There are no defined recipes. So you might as well take advantage of it!
Toast your small slices of wholemeal bread in the toaster, spread with a hint of plain cream cheese (or other) and carefully and intelligently arrange your leftovers on top.
