Andreas Mikulecki makes green sauce

Ingredients for 50 people:

– 1 dollop of mayonnaise

– 1 dollop of mustard

– Two liters of sour cream

– One and a half liters of sour cream

– A liter and a half of milk

– Salt and pepper

– The seven herbs: borage, chervil, cress, parsley, burnet, sorrel and chives, in Frankfurter herb bundle rolls, at least ten of them.

Preparation:

Mayonnaise and mustard are mixed with sour cream and seasoned with salt and pepper. The seven herbs are then chopped up with the milk in the blender in three passes and then added to the mixture. If it tastes too bland because the acidity of the sour cream is not sufficient, you can add a freshly squeezed lemon.

If the mixture is too runny, stir in a cup of quark for more consistency. It is traditionally served with boiled potatoes and sliced, hard-boiled eggs.

If there is too much green sauce left after the meal, you can use it to make a wonderful salad dressing with the addition of vinegar and sunflower oil. (marie)
