The algae man
Toine Wilke is the algae man. He once he was fascinated by this healthy and sustainable vegetable from the sea during a surf trip to Indonesia. “In 2013 I graduated with ‘world seaweed guru’ Stefan Kraan in Ireland. There I learned all about the food of the future,” he says in To eat!.

Toine: “It’s a very nice natural product. It’s packed with nutrients and taste. It tastes great. Fibers, vitamins, minerals and proteins and omega 3’s; they’re all in this vegetable. It is a perfect addition to our current diet. That’s why it’s really weird that we eat so little. While Asia is everywhere in supermarkets, in the West we hardly eat seaweed, not even in the Netherlands. “Not on sushi and wakame salad that shines.”
