With that permission you can read a number of sensors, but collecting a huge amount of data is exaggerated. Access to the memory / sd card, camera, microphone, contacts and location really has to be given separately. The data provided by the other sensors (acceleration, proximity, brightness, etc.) is not very valuable. It is also not very user-friendly to give permission for all those sensors separately.

I think the message box is a drama, but that is more due to its use (mainly messages with a new message from …, look in my ….), that could just as easily have been done with the regular email .

The DigID app can reach your camera, but does nothing more than forward the text from the QR code. If an app is not trusted, it is better to analyze the data that the app sends. In practice I definitely need it, but not often. If you look at how much data is sent, that is very little. Maybe it includes your location (I can’t check that, but it shouldn’t be possible), but it certainly isn’t a lot of information. It all seems purely functional to me.

I do not trust the government’s apps, I think it is fairly paranoid (although the tax authorities give reason to do so). They can already request all information via other channels.

The Play and app stores are full of apps that appear reliable, but for which all kinds of seemingly unnecessary permissions are requested and that are pleasantly browsing your phone for useful information. I would be more careful with that.
