One of the most beloved holiday dishes in Argentina is vitel toné, which translates to “tuna steer.” This dish typically features beef tenderloin mixed with a tuna-mayonnaise sauce, sometimes enhanced with anchovies. However, a more economical version can be made by substituting beef with boneless pork, creating what is known as ”pork toné.”
“We can make the same dish, which we will call pork toné, changing only the beef breast for the boneless pork or by a cut of the ham that can be the pork breast itself, the buttock, the square, the rump or loin ball. As for prices, the value of the beef breast is at $9,800 and its similar pork at $6,200, almost 40% cheaper,” they stated.
Another traditional dish, the piglet, which was often sent to a local bakery for cooking, can now be replaced with a leg of ham, pernil, or the shoulder. Thinking about 10 kilos, we are talking about an average of $100,000, where approximately eight people eat. In the case of ham or pork leg, it has a value ranging from $3,500 to $4,500, which, with a weight of 11 kilos, gives an average of $44,000 and approximately 15 people eat. In the case of the shoulder, the value ranges from $3,200 to $4,200 and it weighs six kilos, giving an average of $25,200,” they explained.
