All over Switzerland today there is speculation, guessing and haggling – about this one bun that makes its connoisseur king for a day. But how are the three kings cakes actually made? A self-experiment at baker Meinrad Christen in Stans.

Meinrad Christen is not a man of big words – but of baking. He throws flour, egg, yeast, sugar and salt into the dough machine, plus an almond and sugar mixture, a little lemon, butter and water. “The sultanas are added later, otherwise they will be crushed.” Then you have them together, the ingredients for a classic Epiphany cake. Whereby this is actually not a cake but a bread.
