From Palm Desert in California to Bagnols en Gard in the Rhône, Frédéric Rozier, the 44-year-old baker and pastry chef, never stops putting his hands in the dough.
Duty calls me ! This very personal injunction germinated in Drômois Frédéric Rozier. At the end of his third year, when he was in the process of orientation, he approached the Compagnons du duty to become a baker. In addition to work-study training in a traditional manual trade, this movement also offers a tour de France of companionship and community life.
While he left to work in Reims, he attended the CFA (apprenticeship training center) in Tours to obtain his bakery CAP. For two years, from 1994, he attended the Maison du Devoir in Reims. His CAP in hand, he continued his training, this time at the CFA in Nîmes for pastry. Graduated, in the tradition of companionship, he takes his bundle.
“I first went to Lyon where I stayed for a year. Then, I went to California, to Palm Desert for a year. Then, for two years, I worked for a fellow baker in Ibiza”, emphasizes Frédéric Rozier.
His return to France took him to the Paris region, to Antony (Hauts-de-Seine). He gets married and the couple decides to live in the Gard.

“I had decided to set up on my own. I was looking to buy a bakery in the Uzès or Remoulins sectors. But without going through specialized agencies. I went to see the bakers directly. I had found one. bakery to buy in Valliguières. But I did not make up my mind quickly and a competitor was faster. And the one in Laudun was selling. It was in 2008. I had my point of sale on rue de la République and my bakehouse on rue Courbet, he details. From the start, my goal was to change the bakery. It was narrow, dilapidated, and difficult to access for my suppliers. I looked at L’Ardoise. I absolutely wanted to develop my business. And I found this bakery, here in Bagnols, avenue de la Roquette with the store and the 120 m2 bakery behind, at the end of 2019. “ Working conditions have thus improved for its five employees and its apprentice.
