I had contact with the public straight away. The bar is a very democratic place, because everyone drinks coffee. I saw my father as modular. He would tackle the street urchin who wanted to steal the ice cream, but without being unpleasant: because the street urchin would forgive him, but you had to give him a scolding. And then he related to older and wealthier people. So did my grandfather. Of all the things I’ve done, it’s the one I found myself with the most, because in our profession you meet all kinds of people, you have to know how to sit at the table with everyone. It’s a great resource.
Then he worked as a parking attendant, as a boy, to earn his first money. He recalled with amusement his first time, which earned him a lesson that he still respects:
I didn’t know how to dress. I was used to my grandfather always being very formal, in a suit at the bar. My work clothes, as a waiter, were a white shirt and black trousers, sometimes with a tie or vest. Since I had to stay in the parking lot of a restaurant I go to work like this: white shirt with black trousers. My colleague was wearing a hole in his overalls and was clearly the valet: I was mistaken for the manager’s son, because I was dressed exactly! That evening I earned zero, they gave all the tips to him and he earned much more than the waiters! The following Saturday I came back with the ugliest overalls I had, I had used it to paint the house. I sucked! Guys, every job has its own uniform.
