Gloria in Shoreditch, the group’s venue Big Momfamous for its artisanal pizza and already awarded by 50 Top Pizza, will host the event for free, just as the two pizza chefs will not take any compensation, making the raw materials used available.

Francesco Martucci’s pizzas
– Futuro di Marinara: roasted tomato cream, Caiazzane olives, anchovies, wild garlic pesto, Salina capers, oregano.
– Saturnia: roasted tomato cream, buffalo mozzarella from Campania DOP, soy-fermented black garlic mousse, Caiazzane olive powder, Salina caper powder, crunchy onion, red tuna bottarga, Fontana Lupo extra virgin olive oil.
– The 7 consistencies of onion: new dough (soft wheat, durum wheat, spelt, rye, rice, buckwheat, corn, linseed, pumpkin, sunflower, millet), creamed onion, fermented, crunchy, burnt, mayonnaise onion, onion gel, onion jam, fiordilatte.
Diego Vitagliano’s pizzas
– Abra-ciami: double crunchy pizza, smoked provola, smoked angus carpaccio, sweet paprika, fleur de sel, rocket, grilled mayonnaise.
– Che Cavolo: black cabbage cream, smoked Cantabrian Sea anchovies, turmeric walnuts, fried black cabbage leaves.
– Head shot: leeks with butter, fiordilatte, pepper cuvé, coppa di testa, papaccelle cream.
