Grafton Correctional Institution Hosts Revolutionary Public Dinner

In a historic milestone for Ohio, Grafton Correctional Institution organized a remarkable event that marked the first time a five-course meal was served to the public, prepared entirely by incarcerated individuals using produce from the prison gardens.

A Culinary Experience Like No Other

Almost 60 dining guests gathered at Grafton Correctional Institution, where the meal was meticulously crafted by participants of the EDWINS Leadership and Restaurant Institute. The ingredients were sourced from the institution’s two gardens: the “EDWINS’ Garden” and “Hope City Garden,” emphasizing the skillful cultivation efforts of the inmates.

EDWINS Program: Training for a Fresh Start

EDWINS, a non-profit organization dedicated to providing culinary education within correctional facilities, facilitated the event as part of their comprehensive culinary course offered in 652 prisons and jails nationwide. This intensive six-month program equips incarcerated individuals with essential cooking techniques, safety and sanitation practices, knife skills, and other certifications for future employment in fine dining establishments.

Reframing Possibilities in Prison

Chef Brandon Chrostowski, a recognized James Beard Award semifinalist, reflects on the revolutionary impact of the program he founded in partnership with Grafton Correctional Institution in 2012. He asserts that “every human being, regardless of their past, has the right to a fair and equal future,” highlighting the broader implications of culinary education within the prison system.

An Enriching Dining Atmosphere

The outdoor dinner setting was adorned with bouquets of vibrant roses and lilies, while a table draped in crisp white linens showcased an array of delectable offerings. Diners enjoyed fresh baked bread paired with olive oil, all amidst the lush surroundings of the gardens tended by the incarcerated chefs.

Personal Growth Through Culinary Arts

Among the participants was Greg Sigelmier, 40, who found immense value in the program and its ability to foster personal development. Initially apprehensive about hosting guests, he stepped out of his comfort zone, expressing aspirations of continuing his culinary journey upon release. “This could be the rest of my life. And they’re doing this for everybody. They’re not looking at me as a number. They’re looking at me as a person,” Sigelmier stated.

A Gourmet Culinary Journey

The exquisite menu featured a beet salad with goat cheese, followed by a kale pocket filled with farmer cheese. Dinners clutched forks as they enjoyed roasted salmon topped with béarnaise sauce and sublime braised garden greens, leading into savory roasted lamb finished with a tomato provencal. Completing the dining experience was a light corn cake adorned with blueberry compote and Chantilly cream, each course beautifully complemented by carefully curated mocktails, including a refreshing “botinique” crafted from soda with thyme-infused honey syrup and a hint of lemon.

Building Community Through Cooking

The program emphasizes collaboration, allowing the participants to build camaraderie while preparing meals. “Working together as the community that we are and at the end getting to eat the food, it’s the best part,” expressed Efrain Paniagua-Villa, 28. He fondly reminisced about cooking with family before his incarceration and acknowledged how the program helps to fulfill that longing.

A Look Ahead for Graduates

The EDWINS program at GCI accommodates a diverse range of incarcerated individuals, spanning varied ages and sentences. Upon graduation, some participants will have the opportunity to apply for roles at local Cleveland restaurants, setting the stage for successful reentry into society. Warden Jerry Spatny emphasized the program’s broader mission: “We want our neighbors to be prepared to be law-abiding citizens, and that’s what this program is about.”
