Reheated frying oil as a regular part of the diet may be linked to the risk of brain-degenerative diseases, according to a recent study.
In a study carried out on rats, it was found out how frying oil affects the cooperation of the liver, intestines and brain, which is known to be related to neurological diseases.
In an as yet unpublished study, rats were followed for 30 days and divided into five different groups. Some of the rats were fed different heated and unheated oils in addition to the usual diet. The rats in the control group ate according to the usual diet.
Already in previous studies, the consumption of deep-fried foods has been found to be connected to cardiovascular diseases, metabolic diseases and some cancers.
A recent study confirmed that reheated oils in the diet raise cholesterol, among other things, and damage internal organs and part of the brain.
Rats that were also fed reheated oils had more neurodegeneration, oxidative stress and inflammation in the liver than control groups. Colon lesions were also observed in rats.
Pay in special risk
A connection between heated oils and brain-degenerative diseases has also been found in humans.
The liver in particular is thought to be sensitive to damage caused by heated oils. Repeated consumption of heated oils can even expose you to fatty liver and other liver diseases. Damage to the liver, on the other hand, increases the risk of inflammation and oxidative stress, which predispose to neurological diseases.
When oil is heated, its chemical structure changes, causing the amount of good antioxidants to decrease and the amount of harmful compounds to increase. Reheating speeds up this process even more.
To reduce the risk, it is recommended to include sources of omega-3 fatty acids, vitamin E, antioxidants and fibers in the diet. The Mediterranean diet and the MIND diet developed by researchers can also slow down the aging and degeneration of the brain.
