Leif GW Persson guest judge in Sweden’s master chef

It was both rice and praise when Leif GW Persson was a guest judge in Sweden’s master chef. On the menu was his self-shot venison.

It was in the elimination that four of the participants had to face Leif GW Persson. The task was to prepare a dish of GW’s self-shot venison, from the farm in Sörmland.

The master chefs had to choose between sirloin or sirloin.

– I think it is the very best meat, and since I had to choose, and will taste it later, I thought I would take what I like best, said Leif GW Persson before the chefs took on the task.

The master chefs were allowed to use optional accessories for the main course. After an hour it was time for tasting. This is how Leif GW Persson rated all dishes!

Henric: Fried deer tenderloin with red wine sauce, smashed potatoes and carrots

GW’s comment: “It’s such an individual arrangement. It makes it easier, you see what it is. You feel what it tastes like, individually. You may be missing that synergy that elevates the whole. But the meat is cooked just right.”

Josefine: Fried venison fillet with artichoke puree, baked artichokes and lingonberries

GW’s comment: “Nice color combination, green and red, it works. There is that synergy, they kind of go together. The final sum will be higher than the individual components.”

Oskar: Fried deer tenderloin with fried potatoes, pickled chanterelles and mushroom stew

GW’s comment: “It’s a bit linear in a way. The meat is good, the potatoes are good, the mushrooms are okay. On the other hand, pickled chanterelles, I think it would have been better to refrain from that, it’s too much acid in relation to the other things.”

Sebastian: Fried venison fillet with artichoke puree, pepper sauce and compote

GW’s comment: “The thyme is very noticeable. I don’t really understand what that has to do with it either. Otherwise, I have no objections. The meat is excellent, and the pepper sauce, well, it’s perfectly fine in the context.”

After a discussion with the rest of the jury, Mischa Billing, Tommy Myllymäki and Tom Sjöstedt, it was Josefine’s venison fillet that was named the best dish. Oskar was the one who had to leave the competition. There are now seven participants in Sweden’s Master Chef 2024.
