Researchers have discovered a new way to juice apples that may increase their health benefits. The new method was found to preserve polyphenol content four times more.

Researchers say they can maximize these compounds by using a spiral filter press that removes oxygen.

Experts say that by excluding oxygen from all other processing steps, food spoilage is reduced. Past research has also suggested that a group of polyphenols called flavan-3-ols may help improve blood pressure, cholesterol concentration and blood sugar.

“Nutrient losses are often due to the presence of oxygen, which rapidly degrades some nutrients, such as flavan-3-ols or vitamin C in apple juice,” researcher Stefan Dussling told the journal Research International.
