[메디컬투데이=이승재 기자] Research results have shown that certain components in salmon benefit cardiovascular and metabolic health.
The results of a study identifying specific components in salmon that are helpful for cardiovascular and metabolic health were published in the Journal of Nutrition.
The Mediterranean diet is a diet that focuses on ingredients such as vegetables, fruits, whole grains, and olive oil, and is known to help prevent various cardiovascular and metabolic diseases. In the Mediterranean diet, fat comes from sources such as olive oil, and protein comes from poultry, fish, and beans.
Compared to the Western diet, this Mediterranean diet contains less red meat, sugar, and salt, which is helpful for overall health.
The researchers focused on salmon, which is an excellent source of fat and protein in the Mediterranean diet. They investigated which substances in salmon benefit cardiovascular health among 41 adults eating a Mediterranean diet.
The researchers separated and identified various biological substances from the blood of research participants using chromatography-mass spectrometry. Among the identified substances, those that cannot be found in foods other than salmon were named ‘salmon FSC’. The researchers then used machine learning to identify metabolic products associated with salmon FSC.
The results showed that the two types of salmon FSC and their two corresponding metabolic products had significant benefits for cardiovascular and metabolic health. In particular, the levels of total cholesterol, LDL cholesterol, triglycerides, and ‘Apolipoprotein B’, known as an indicator of heart disease, improved.
Through these results, the researchers concluded that certain substances in salmon benefit cardiovascular and metabolic health.
