What is the difference between green, yellow and red?
The level of maturity is what essentially differentiates between red, orange, yellow and green peppers.
Green peppers are more bitter because they are less mature than red ones, and in general, the darker the pepper, the more nutrients it gets.
This also means that green peppers contain less sugar and carbohydrates, but not enough to make a significant nutritional difference, according to Smith.
Red pepper contains more vitamins and antioxidants, and higher levels of vitamin C and vitamin A due to the presence of beta-carotene, which gives red pepper its color.
Red pepper is also rich in flavonoids, which are natural compounds that help prevent cardiovascular disease and maintain hormone balance.
Yellow and orange peppers have a moderate amount of nutrients and sweetness, but they are nonetheless good sources of vitamin C and vitamin A, and lutein and zeaxanthin, which are antioxidants that benefit eye health.
How to eat sweet pepper
This depends on the recipe, some prefer red and other recipes prefer green and other colors.
“We eat with our eyes,” Smith says. “Having different colors makes things more visually appealing and so we’re more excited to eat them.”
Peppers can be eaten by quickly frying them in oil, or by cutting them into cubes for a salad, or by adding them to the sauce for color and flavour.
Thinly sliced peppers can also make a great topping on pizza or add crunch to a sandwich.
One of Smith’s favorite ways is to eat bell peppers with a dip like hummus or salsa.
