Remind Yourself of a Fairytale Winter with an Ancient Recipe from Josef Lada

Winter, frost and drifts of snow. This is how each of us would imagine the real Ladova winter. But in recent years, there is not even a trace of the snow, and today’s children hardly even know what it is to skate on a frozen pond. Remind yourself of a fairytale winter with an ancient recipe.

Josef Lada was an iconic Czech painter, illustrator and writer who significantly influenced Czech culture and painting. He was born on December 17, 1887 in Hrusice and died on December 14, 1957 in Prague. Lada is known primarily for his landscape paintings, illustrations of children’s books and unforgettable characters from the Czech countryside. He had two children and a very modest life.

Josef Lada experienced the hardships of the First and Second World Wars, so his feelings often appeared in his paintings. However, those who would expect pain and suffering are mistaken. Lada always tried to convey a good and positive mood, joy, laughter in his paintings and to capture things as they should be.

Chicken according to Josef Lady

The recipe for roasted chicken refers to the period at the turn of the 19th and 20th centuries, when the painter and Středočech Josef Lada, who is famous for his idyllic pictures of winter scenery, lived and created. As it turns out, he was famous enough that his subtle and fine-tuned works are reflected in the culinary industry as well. If you would like to keep the old holiday custom, you can even serve real plum dumplings with the chicken.

What you will need:

  • 1 whole chicken
  • 2 onions (cut into strips)
  • 2 carrots (cut into rounds)
  • 2 cloves of garlic (chopped)
  • 2 tablespoons lard or oil
  • 1 teaspoon cumin
  • 1 teaspoon marjoram
  • salt and freshly ground black pepper
  • 1 cup chicken broth or water
  • any attachment

How to properly prepare and bake chicken?

  • First, preheat the oven to 180°C.
  • Then prepare the marinade in a plastic or glass bowl. Mix cumin, marjoram, salt and pepper.
  • Clean the chicken thoroughly and rub it on both sides with the prepared mixture, which will then give it the right taste.
  • Put a little lard or oil in the baking pan, add chopped onion, carrot and garlic. Place the marinated chicken on this layer.
  • Add a little chicken stock or water.
  • Then cover the baking pan and place it in the preheated oven.
  • Bake for approximately 1.5 to 2 hours.
  • During roasting, regularly pour broth or water over the chicken and occasionally stir the roasting vegetables.
  • Don’t forget to turn the chicken occasionally during cooking to check if it’s juicy enough. The chicken is done when the meat separates easily from the bone.
