Cévennes Chestnuts: AOC and AOP labels bring local treasure into the spotlight

Did you know that among the finest chestnuts, there are many from our region? Those familiar with the markets and local recipes will not be surprised to learn that one of the most beautiful products from our department is the famous Cévennes chestnut, adorned with the AOC (since 2020) and AOP (since 2023) labels. It took twenty years of lobbying for the first label to see the light of day. In total, no less than 206 communes, in Gard, Lozère and Hérault, benefit from the precious AOC label, including 81 in Hauts-Cantons, Lodévois and Larzac as well as Saint-Guilhem-le- Desert. The Olargues chestnut is one of the 30 varieties listed in the specifications of the AOC Châtaigne des Cévennes, having conquered over the years the Espinouse massif, tamed by castanéiculturists. Tasted raw, in jam or in cream, used in the form of flour or in aperitifs, the chestnut has truly earned its letters of nobility at dessert time, in its frozen form. The work with sugar allowed the fruit to rise to the level of a luxurious, successful bite. Sabaton, Ladurée, Fouquet: all the big names got involved! And at 150 euros per kilo of candied chestnuts, we can say that the “breadfruit” has indeed been touched by grace.
