Many people already know that carrots have various benefits for the body. What’s more, a new study published in the journal Nutrients this month found that carrot juice drinks are suitable for consumption by people with diabetes. Why is that?
The research states that carrot juice can help improve the immune system and reduce inflammation. In their research, researchers from the University of Southern Denmark considered that the bioactive compounds falcarinol (FaOH) and falcarindiol (FaDOH) found in carrot juice could influence inflammation.
There were 14 study participants aged between 20 and 55 years who underwent blood tests before and one hour after consuming the juice.

Researchers found that carrot juice can be beneficial for people with certain diseases such as diabetes and cancer, which are also affected by inflammatory problems.
“In contrast, carrot juice intake influenced pro- and anti-inflammatory cytokines in LPS-stimulated plasma samples one hour after juice intake compared to not consuming juice,” wrote the study results, quoted from the New York Post, Monday (18/12/2023) .
“Carrot intake has an acute effect on the reactivity of parts of the innate immune system, and the bioactive compounds in carrots that can explain this effect are most likely oxylipin acetylenes such as FaOH and FaDOH,” he continued.
