When Kris Jenner isn’t busy in the boardroom or traveling the world, you can find her at home in the kitchen (just take a look at her fridge). Kris has a ton of recipes that she is famous for, from her delicious brownies to her delicious layered sauce.
For this one, he had to go back to the archives. She started making her pasta Primavera shortly after marrying Robert Kardashian, and it quickly became her family’s favorite dish. One year, for Rob’s birthday, he specifically requested this dish (along with the aforementioned brownies).
A couple of tips from Kris: use as many fresh vegetables as possible (she doesn’t include tomatoes), and feel free to add a tablespoon of ricotta cheese if you like.
Next, learn how to make Kris’ Pasta Primavera and Crispy Garlic Bread.
Kris’s Spring Pasta
Total time: 20 minutes
Ingredients:
1 pound farfalle (or your favorite pasta)
1/4 cup extra virgin olive oil
2 large carrots, cut into 1/2-inch pieces
1/2 head of broccoli, cut into small florets
1 zucchini, halved lengthwise and cut into 1/2-inch-thick half-moons
1 red bell pepper, cored, seeded, and cut into 1/4-inch-wide strips
1 green bell pepper, cored, seeded, and cut into 1/4-inch-wide strips
1 yellow bell pepper, cored, seeded, and cut into 1/4-inch-wide strips
1 clove garlic, minced
Kosher salt and freshly ground black pepper
1/2 cup freshly grated Parmesan cheese, more for serving
1/4 cup chopped fresh basil
Instructions:
1. Bring a large pot of salted water to a boil over high heat. Add the farfalle, and cook according to package instructions until al dente.
2. 2. While the pasta is cooking, heat the oil in a large frying pan. Add the carrots and cook, stirring occasionally, until softened, about five minutes.
3. Add the broccoli and zucchini and cook, uncovered, stirring occasionally, until softened, about three more minutes.
4. Add the red, green and yellow peppers and cook, stirring often, until tender, about five minutes.
5. Add the garlic during the last minutes of cooking.
6. Season with salt and pepper to taste.
7. Remove from heat and partially cover the pan with a lid to keep the vegetables warm.
8. When the farfalle are done, remove and reserve half a cup of pasta water. Drain the farfalle well.
9. Return the farfalle to their pot. Add the vegetables, parmesan cheese and basil.
10. Mix well, adding enough of the reserved cooking water to melt the cheese into a light sauce.
11. Season again with salt and pepper to taste.
12. Serve hot, with more parmesan cheese on the side.
