Easy and Fast Lasagnette Recipe: The Lazy Woman’s Lasagna

On winter days, nothing tastes better than comfort food. Like that delicious Italian classic: fresh lasagna. Although this requires quite a long time in the kitchen, and afterwards the lasagna also has to go into the oven for at least half an hour. No patience for that? Go for a lasagnette, or as foodie and blogger Lorentia Veppi puts it: a ‘lazy woman’s lasagna’.

The concept of a lasagna is clear: you place thin lasagna sheets layer by layer in an oven dish, with sauce in between and some grated cheese on top to finish the dish. But what is a ‘lasagnette’? The Italian Lorentia Veppi, who you know as ‘Lorentia’s Table‘ on Instagram – where she regularly goes viral – and who once participated in the television program Bake Off Vlaanderen, has the answer to that question.

Lasagna sheets cut into pieces

The name ‘lasagnette’ is derived from the Italian word ‘lasagna’, because this pasta variant is a bit like its big brother. Although the lasagnette is easier and faster. “You don’t need an oven, because with a lasagnette the uncooked lasagna sheets are stirred into the pasta sauce, after which they cook in the sauce,” says Lorentia. “This makes it an easy one-pan dish that, unlike a regular lasagna, requires little effort. Actually, a lasagnette is just lasagna in a pan. But without the built-up layers.”

“It doesn’t get much easier than this: you don’t have to fear crazy béchamel sauce and you don’t have to keep hungry stomachs growling longer than necessary. You simply let the lasagna leaves, which you break into pieces or cut into strips, cook in your pan with sauce and you can serve the pasta immediately. By the way, it is best to use fresh lasagna sheets that you find in the supermarket. It also works with dried skins, but you need a little more liquid in your sauce.”

Tomato sauce combined with mozzarella and pasta is always a hit. The more cheese, the higher the comfort food content.

“The lasagnette can be described as pure comfort food. Like almost all one-pot dishes. Tomato sauce combined with mozzarella and pasta is always a hit. The more cheese, the higher the comfort food content. This dish is perfect to prepare on a cold winter evening,” says Lorentia. “Ready in half an hour and super tasty.”

“The cooking method in which you cook pasta in your sauce is nothing new and is often used with other types of pasta. The one-pot pasta is still a trend on social media,” says Lorentia. “The lasagnette also seems more of a hype to me. You won’t easily find the dish on a menu in Italy, but I don’t think Italians have anything against it either. Because it is tasty. And handy: you only have to wash one pan.”
