The Impact of Warm vs Cold Rice on Blood Sugar Levels

A plate of warm rice will taste delicious, especially if added with tempting side dishes. However, many people believe that warm or hot rice can actually increase blood sugar levels in the body.

Instead of hot rice, it is said that cold rice is more ‘friendly’ for blood sugar. Is that right?

For your information, cold rice means rice that has been left for a while at room temperature, while hot rice means rice that has just been cooked.

Rice that is left at room temperature tends to have a lower glycemic index than hot, freshly cooked rice. This high glycemic index causes blood sugar to rise quickly and this is quite risky for people with diabetes.

Nutrition expert, Dr Dr Dian Novita Chandra, M Gizi, explained that cold white rice also contains resistant starch, so it does not raise blood sugar quickly. Meanwhile, hot rice actually triggers the starch content to become resistant.

“With resistant starch, it doesn’t break down easily, so it doesn’t raise blood sugar quickly,” he said at a Seminar on Increasing Public Knowledge and Awareness Regarding the Importance of Early Detection of Diabetic Retinopathy and Changes in Nutritional Patterns of Diabetes Patients in Depok, at the Sawangan District Office, Wednesday (29 /11/2023).

“People with diabetes usually eat yesterday’s rice. The longer it stays cold, the better. Usually it’s yesterday’s rice,” he said again.

Apart from that, a nutrition specialist, SpGK(K), Dr Krisafelfa Sutanto said that it is also important to pay attention to the processing of white rice. According to him, rice is better processed and cooked in a steamer or steamed using traditional cooking utensils, rather than using a rice cooker.

“We can stir it in a steamer, but not in a rice cooker. So the glycemic index is higher because it’s not processed at all, the rice is easier to digest. So it’s best to cook it in a pan,” he added.
