Metro cuts can be found in almost every store today. Packaged dessert containing four sponge cakes with cream covered in sugar mass, partially dipped in chocolate. Are you drooling already? So get into the kitchen and make your own. They will be even tastier and at least a little healthier.
Where did the Metro dessert come from?
As the name suggests, Metro dezert was created in honor of the opening of the first line of the Prague metro in 1974. And because at that time there were sets with four wagons, there are also four cuts in the package. This popular dessert was invented by the Research Institute of Prague Mills and Bakeries, because it was given the task of coming up with a dessert that is sufficiently durable and widely usable. They were inspired by Dutch and Swedish sweets. In addition to the classic flavor, lemon, orange, and later also strawberry, cinnamon or even mint flavors were also produced. After the revolution, we didn’t see it for a while, but in a few years it flooded the supermarket shelves again and is still very popular today.
Raw materials for homemade Metro cut
4 eggs 100 g caster sugar 1 bag of vanilla sugar pinch of salt 140 g plain flour 60 ml semi-skimmed milk 50 g butter 50 g caster sugar 2 tablespoons rum 400 g marzipan 100 g dark chocolate frosting
First, we will make the corpus
Separate the yolks from the whites. Beat the egg yolks with the granulated sugar and half of the vanilla sugar until foamy. Beat the egg whites together with a pinch of salt until stiff. Now combine the two substances, mix in the pre-sifted flour and add the milk. Mix thoroughly, spread the dough on a baking sheet lined with baking paper and bake in an oven preheated to 180 °C for about 15 minutes. Immediately after removing the body, remove it from the tin and after it cools down, cut it into three parts of the same size.

Let’s start with the cream
Beat the butter with the remaining vanilla sugar, flour and rum to a smooth cream. Spread half of the cream on one body, place the second one on top of it, spread the rest of the cream on top of it and add the third body. Let it harden in the fridge.
And we will rush to the final
Then cut the dessert into rectangles measuring 6 x 3 cm. On a rolling pin sprinkled with a little powdered sugar, roll out the marzipan into a sheet about 3 mm thick and cut it into strips 6 cm wide. We wrap each dessert in marzipan, cut it off, wrap another one. Dip both ends of each piece in the melted chocolate glaze and let it harden.
