A case of skin rash that looked like a whip mark was reported in Switzerland after eating poorly cooked shiitake mushrooms.
According to the New York Post on the 17th (local time), a 72-year-old man from Switzerland was recently hospitalized after eating undercooked shiitake mushrooms and developing an abnormal skin reaction. The case was also introduced in the medical journal New England Journal of Medicine.
Mr. A, who usually likes mushrooms, ate a dish containing shiitake mushrooms. Two days later, a skin rash appeared on his back and buttocks. This rash appeared in the form of red horizontal and vertical stripes, similar to whip marks, along with itchiness. Mr. A said, “The symptoms were so painful that he couldn’t even sleep.”
Mr. A, who eventually visited the hospital, was diagnosed with shiitake dermatitis. It is reported that he was treated with prescriptions such as steroids and antihistamines.
Shiitake dermatitis was first reported in Japan in 1977. This is known to occur when shiitake mushrooms are eaten raw or undercooked. It is characterized by a linear rash that looks like a line has been drawn, and symptoms such as itching, swelling, and diarrhea may appear. These symptoms usually appear 2 to 3 days after eating mushrooms.
Shiitake dermatitis is caused by a component called lentinan in shiitake mushrooms. Lentinan is also an ingredient with anti-cancer effects, but sensitive reactions may occur in people with severe allergic reactions or weakened immunity. Lentinan converts cytokines, protein active substances secreted by white blood cells, into substances that cause inflammation, causing allergic reactions such as dermatitis.
Shiitake dermatitis can be prevented by applying sufficient heat when cooking shiitake mushrooms. According to experts at the Geneva University Hospital in Switzerland, if shiitake mushrooms are cooked at a temperature exceeding 145 degrees Celsius, lentinan is destroyed and shiitake dermatitis does not occur.
