With his hat, his overalls and especially his ice cream maker that he drags behind him, it is difficult not to see Christophe. Since 2012, he has been traveling all the beaches of Marseille to sell coconut flavored sorbets. “It’s a recipe that everyone knows in the West Indies, it’s a mixture of coconut milk, sweetened condensed milk, spices, cinnamon, almonds, lime zest”, he explains. It was in London and then in Paris that Christophe began to market his family recipe.
“It’s a bit physical, we pour the cream into the stainless steel tank, then all around, we add ice cubes with coarse salt, this is to bring down the temperature. Then, we turn with the crank, the cream swells and freezes at the same time and it becomes ice cream.” But the adopted Marseillais is delighted to be able to share moments of conviviality with locals and tourists on the beach, he still fears for the future of his activity. “No one has cash anymore, so don’t forget to slip a €5 note into your swimsuit when you go to the beach,” smiles the Martinican.
