Starting with the search for the most compatible flavors and ending with the creation of a recipe for products that most closely match the preferences expressed in consumer surveys. What has AI managed to produce so far? The offer is actually quite broad and covers various product groups. A Chilean food technology company NotCo used machine learning algorithms to create vegan versions of dairy and meat products by analyzing them at the molecular level. With an AI tool named Giuseppe, the plant world was searched for products most similar in structure to various meat and dairy products. The search has already resulted in a finished product – cheese slices Kraft NotCheese, which bluntly states that it is not real cheese. After trials, several varieties of “non-cheese” were put on sale in the US this year.

However, not all AI experiments are successful. For example, New Zealand grocery chains Pak’nSave the attempt to offer customers unique recipes led to such curiosities as a stew with human flesh or an “aromatic water mixture” whose ingredients would create deadly chlorine gas.
