Nutritionists call freezing the best way to prepare vegetables, fruits, berries and mushrooms for the winter. This way they retain almost all the benefits. True, only if you freeze food correctly. Nutritionist Natalya Zubova named the main mistakes due to which vitamins disappear and toxic mold remains.

For example, under no circumstances should you freeze unwashed berries. Otherwise, not only the raspberries and lingonberries themselves will thaw, but also insect larvae, and even mold spores that end up on the berries.

The second mistake is to freeze all the berries: whole and crushed. Only absolutely healthy berries can be sent to the freezer for the winter, otherwise diseased specimens will infect everyone.

The nutritionist also does not recommend freezing mashed berries with sugar. Not because something will go bad. There is simply more harm from such a preparation than good, since sugar is also added to the berry fructose.

Mushrooms cannot be frozen not only unwashed, but also raw. First, boil them for about 20 minutes, skimming off the foam, and only then send them to freeze.

In order to preserve the structure of mushrooms, berries and vegetables, they must be frozen quickly, using the blast freezing function. But they, on the contrary, must thaw slowly: not at room temperature, but in the refrigerator.

Repeated freezing is a utility killer. If the berries have managed to “warm up”, they no longer belong in the freezer. By the way, ice vitamins can be stored for 6 months at a temperature of -16 degrees and for a whole year at -18 degrees.
