The society Reims biscuit factory, which manufactures biscuits, madeleines or rusks at the artisanal level, wants to publicize its ability to manufacture for third parties. Its turnover for 2022 is less than 1 million euros. Its founder Moussa Ouarouss highlights his production of madeleines à la mirabelle plum from Lorraine On behalf of Terroir crazy. This last company achieves around 12 million euros in turnover in the distribution of gourmet products. It belongs to the Vega Fruits cooperative group, the main operator of Mirabelle plums from Lorraine. “We operate from A to Z, from the selection of local or traditional raw materials, from specifications that we have determined in 3-4 months”, he confides. These madeleines are marketed in the fifteen or so Fous de Terroir shops in Lorraine and Alsace, and on the Fous de Terroir website. “We know how to adapt very well to our customers, as long as they are on premium like us. We have expertise in developing new recipes. We discuss costs transparently »he says.

Among the Biscuiterie de Reims partnerships already in place, the entrepreneur mentions the SNCF, which orders limited series every three months. The young company, which started in 2018, decided on its contract manufacturing policy a year ago. To implement it, it filed a building permit, announces its founder, to triple the production capacity of its Bétheny workshop over 1,500 m2.
