Ingredients

  • 2 cups of cooked and shredded chicken
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 3 tablespoons of butter
  • 1/4 cup flour
  • 2 cups of milk
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • To bread:
  • 2 beaten eggs
  • Bread crumbs
  • Vegetable oil for frying

Preparation

  1. In a large skillet, melt the butter over medium heat. Add the onion and garlic, and cook until golden.
  2. Add the flour to the pan and stir well to form a paste. Cook for 1 minute.
  3. Gradually add the milk while stirring constantly to avoid lumps. Cook until the mixture thickens and has the consistency of dough.
  4. Add the shredded chicken and the chopped parsley to the mixture. Season with salt and pepper to taste. Cook for 2-3 more minutes, stirring constantly.
  5. Remove the mixture from the heat and let it cool for a few minutes. Then, she forms small croquettes with her hands.
  6. Dip each croquette in beaten egg and then in breadcrumbs, making sure to coat them completely.
  7. Heat enough vegetable oil in a large skillet over medium-high heat. Fry the croquettes until golden brown and crisp on all sides.
  8. Remove the croquettes from the oil and place them on absorbent paper to remove excess fat.
  9. Serve the croquetas a la Cubana hot as an appetizer or side dish. Enjoy them!
