Ingredients for fried noodle soup:
– Cow: corn or flower core, tortoise core, humpback or loin loin
– Pho leaves: the kind used to make pho rolls
– Vegetables: collard greens or celery
– Carrot
– Onion
– Garlic, ginger, lemongrass
– Spices: oyster sauce, sugar, pepper, cooking oil
Preliminary treatment:
– Thinly sliced beef
– Pho leaves cut into square pieces, each layer is about 10 leaves thick. To make pho noodles according to the file available when buying, use a knife to cut pho into squares with a side of about 5cm.
– Garlic, ginger, and lemongrass, washed and minced
– Sliced or flowered carrots
– Peeled onion, washed and sliced
– Vegetables are washed and cut into medium pieces
Seasoning:
– Beef marinated with oyster sauce, 1 spoon of sugar, 1 spoon of cooking oil, a little pepper. Add all the ginger, lemongrass, and garlic to the marinade.
– Marinating time from 30 to 60 minutes (the longer you marinate, the softer it gets, if you’re in a hurry, you can marinate it shorter)
How to make fried noodle soup:
– Frying pho: Heat oil, drop each layer of pho in and fry until golden brown on both sides (should be fried on high heat, with lots of oil, flip evenly to make the pho swell. Take out and line with greaseproof paper or put on a basket to let the oil drain.
– Stir-fry beef: put oil in the pan, heat up on high heat and drop the beef on the island quickly, when the beef is almost cooked, turn off the carrots, onions and finally the vegetables on the island, turn off the heat (if the beef doesn’t come out, then turn off the heat. add water when stir-fry to have a sauce when eating)
