Siraegi is dried radish. Our ancestors used dried vegetables in winter when it was difficult to eat raw vegetables and fruits. Siraegi is one of them. In the process of drying radish greens, dietary fiber (fiber) increases more than four times. It has the effect of ‘cleaning the intestines’ by discharging toxins and wastes accumulated in the intestines. It also helps prevent colon cancer. In particular, dietary fiber directly lowers cholesterol in the blood. Unexpectedly, there is a lot of calcium in siraegi, which is good for bone health. There is about 10 times more calcium per 100g of radish greens than radish roots. The National Academy of Agricultural Sciences cultured breast cancer cells by adding siraegi, which suppressed the growth of cancer cells and contributed to the death of cancer cells. In another animal experiment, the blood pressure of experimental rats that ate food containing 5% siraegi for 5 weeks decreased by 23% compared to other rats. Soybean isoflavones have a similar structure to female hormones (estrogen), which helps relieve menopausal symptoms. In particular, when estrogen, which protects blood vessels, disappears with menopause, the risk of vascular diseases such as high blood pressure, stroke (cerebral infarction-cerebral hemorrhage), and heart disease (angina pectoris-myocardial infarction) increases, and soybeans reduce these risks. Red beans are rich in saponin and choline, which are good for controlling neutral fat in the blood. Potassium in red beans helps the salty component (sodium) to be discharged well, reducing swelling in the face and body and lowering blood pressure.

Sorghum is rich in antioxidants that reduce damage to the body, such as polyphenols and flavonoids, so eating it regularly helps prevent cardiovascular disease. Perilla is a type of millet that helps to discharge wastes from the body and strengthens the intestines. Glutinous rice is well digested, so it is good for people with weak digestive function. The reason why glutinous rice is added to Samgyetang is because it is a representative grain that comforts the stomach.

Serve with siraegi greens and siraegi (soybean paste) soup with five grains. Our ancestors took care of their health in the winter by eating vegetable side dishes. This is also why colorectal cancer was rare in the past. Various vegetables such as gourds, mushrooms, turnips, radish leaves, cucumbers, and eggplants were dried and used. I grew bean sprouts and used them as a side dish. In the old days when there were no nutrients, our ancestors kept their health by obtaining vitamins and minerals through dried vegetables.
