Copenhagen restaurant noma, awarded three Michelin stars and awarded the title of “best restaurant in the world” in recent years, announced today that it will close its doors at the end of 2024, to transform itself into a “culinary laboratory”, reported France Press.
“To continue being ‘noma’, we need to make changes. Winter 2024 will be the last season of ‘noma’ as we know it,” the Copenhagen restaurant announced on Instagram.
The name of the place comes from an abbreviation of the Danish words “nordisk” (northern, Scandinavian) and “mad” (food). “noma” (“n” with a small letter – note AFP) opened its doors on a quay in central Copenhagen in 2003, then closed in 2016, only to reopen two years later in a location slightly further from the central district , BTA remember.
“In 2025, our restaurant will become a giant laboratory, an innovative test kitchen dedicated to food innovation and the development of new flavors,” explains the restaurant on its website.
The restaurant owner René Redzepi, praised worldwide for his ingenuity, transformed the noma during the pandemic into a wine and hamburger bar for a month in the summer of 2020.
While the emphasis will be on creativity, it will still be possible to eat occasionally at Copenhagen’s noma or other pop-up restaurants around the world.
“Serving our customers will always be part of who we are, but we won’t call ourselves a restaurant,” wrote “noma” in the description of its “noma 3.0” project.
“A large part of our time will be spent researching new designs and developing many other ideas and products,” the restaurant said, without elaborating.
In spring “noma” will temporarily open for two months in Kyoto, between March 15 and May 20.
