Opposite the entrance to the Espace du Palais, a new bakery has been making gourmets happy since the end of August: Tony Letournel is applying the recipe that earned him success in Rouen in his stronghold of Franqueville-Saint Pierre.
TL initials. Tony Letournel, after having conquered Franqueville-Saint-Pierre where he established himself almost 5 years ago, today allows Rouenians to benefit from his know-how as an artisan baker and pastry chef expert in “French delicacies”.
His shop number 2, dressed in black / gold / white, is located on the corner of rue Saint-Lô and allée Eugène-Boudin. It happens to a wine merchant. Previously, the Chantefables bookshop occupied the walls for a long time. A TL sign straddling two streets, therefore, hypervisible, radiant with its two windows. This bright environment enhances the creations of the house, which do not fail to capture the attention of passers-by.
Like the cronut, a TL exclusivity specially designed to celebrate the opening in Rouen. “A hybrid between the croissant and the donut, from a detailed croissant dough in the shape of a donut. It is fried in oil, rolled in sugar and seasoned with flavorings (speculoos, lemon, raspberry, Nutella or salted butter caramel) but also in a simple version, “confides Tony.
That highlights the creamy flank of vanilla baked in a wooden ring, available in puff pastry and biscuits. Also of note is a wide range of kale, with 17 flavors, including the latest, Kinder, which appeared a year ago.
A workforce of 22 people
Sweets, pastries, traditional bread… the snack section completes the picture. Two hot specials of the day, mixed salads, generous quiches. All this homemade. With three formulas: the Classic (€ 7.90), the Gourmet (€ 9) and the Plaisir (€ 10.50 for a prepared dish, a pastry, a drink).
“After four years we have achieved a certain notoriety in Franqueville-Saint-Pierre and we wanted to develop our name,” says Tony, supported on his journey by his partner Julie. Engineer, she turned into business manager to share the management of the TL project.
“Our strength is knowing how to do everything from the baguette to the tiered cake for a wedding of 200 people. Everything we present in Rouen is produced in Franqueville, where the workshop works very well, and sent here every day. We have a great production and sales team, with a total of 22 employees, including 8 positions created for the needs of the extension of our business in Rouen. “
When Tony was born in 1983, his parents ran a bakery on rue Beauvoisine. From the age of 22 he was installed, practicing his trade in Gravigny. Here he is anchored in Rouen. And this is certainly not the last bread in his trajectory.
