If you want to add lightness to your dough and get a fluffy dish, you need to learn how to properly prepare snow from egg whites. To be successful, master the technique that will guarantee it. If you can do this, he’ll never have to deal with your cake being curd again. It will melt on the tongue.
The best ingredients
It may seem that the only ingredient you need for stiff egg whites is eggs. And you won’t be far from the truth. The eggs must be fresh. This is the only way to ensure that they keep their shape at their best and that after whipping they have a velvety and smooth texture. But don’t reach for the newly laid pieces. Let them rest for a few days so that they are ready to absorb more air. It should be at room temperature when preparing. If you take them out of the fridge immediately, wait at least an hour before assembling them. A cold egg white cannot hold as much air and the snow would not be strong enough.
White and yolk
Your success begins with separating the two main parts of the egg. The yolk and the egg white must be separated very precisely. Even small pieces of egg yolks can cause problems when whipping. Prepare two containers for separation. Always break the egg and flip the yolk from one half of the shell to the other and let the egg white drain. If you don’t want to contaminate them, get a new container for each egg.

If you plan to make snow meringues, make sure the egg whites can “age” a little after they separate. Put them in the fridge and let them rest for a day or two.
