Circunvalación Sur and La Única have become a place for good informal dining. Pizza Libre is located next to Jurgers Burger, some excellent hamburgers that we talked about a few months ago. Its location is a luxury, since it is in front of Urdesa Park, one of the few areas with vegetation in a city full of cement.
This pizzeria was born in a pandemic, so the merit is double. Along with Diávolo Rosso, I find them to be by far the best pizzas in town. The mass of one and the other are somewhat different. One more attached to the Neapolitan tradition, but both of great quality. Pizza Libre boasts an excellent selection of ingredients and raw materials, and great consistency in the construction of the recipe and the mixture of ingredients. It was a pleasant surprise and a real pleasure.
I must confess that my table mates demanded to try the Hawaii PL pizza. Without being a purist, it has always seemed an aberration to put pineapple on pizza, which I’ve hated the few times I’ve tried it. This one contained pomodoro, pork rinds, alioli, chives and grilled pineapple. I must confess that I had to take it back at the table when trying it. a delight Cooked pineapple makes all the difference, drier, with less sugar and a slightly toasted flavor, as well as its combination with pork bacon. To those who, like me, get hives from pineapple on pizza, I ask you to try it.
Then we tried a Mascarpeck pizza, with pomodoro, mascarpone cheese, real mozzarella, speck, grana padana cheese, balsamic reduction and arugula. Another well thought out creation. Mascarpone cheese is a delicacy, but it is not produced in Ecuador. It must have been imported. Real mozzarella is wonderful. Nor is anything similar to the original easily found on the hanger, although it is on request with a few producers. The most elegant pizza that we tried.
Finally the New Yorker pizza. Pomodoro, mozzarella, salsiccia, pepperoni, minced garlic, oregano, grana padano cheese and honey. They make the homemade pomodoro perfect, surely with very ripe tomatoes. The touch of honey is barely felt. Very subtle, but it goes perfectly with cheese and garlic.
Highly recommended pizzeria.
